I could have sworn i posted on this one already,,, did it get deleted? Anyway, we use a lot of plyboo and have done a few desktops. We used to use strictly plain old NC lacquer from ML Campbell. The natural ambering of the lacquer gave a nice look to the plyboo. Nowadays though, we use strictly clear CV for our plyboo, harder finish for the desktops and goes on easier. Check out the picture of one we did with lacquer a year or 2 ago.

I should have answered the question in my post above (yea, I'm getting old as well).
A past job we completed were 250 lockers in a Russian Health Spa where unusually high humidity would be present. The conversion lacquer (not varnish) worked flawlessly. One year later the finish still looks like the day it was applied. See attached photos (sorry for the poor quality).
We applied a satin finish pre-cat conversion lacquer from Valspar (VOC Compliant and Haps Free) on our bamboo (plyboo) with great results. Though many times we use a vinyl sealer, for better moisture protection we self-sealed these, sanding with (orbital pad machines) in between coats using 3M Tri-M-Ite 320 Wet/Dry paper, followed up with hand rubbing using Scotch Extra Fine pads.
