We are a casket manufacturer, gluing end grain to end grain on our casket lids. These are solid wood and like to move, so flexibility is important. What is a good glue for this purpose?

If longevity doesn't matter, a PVA or a cross-linking PVA should work well, assuming well-formed joints and fresh cuts. For greater longevity, a reactive polyurethane or a urea resin could work well. For extensive durability, use a resorcinol.
Your glued-up pieces should act as one piece, so flexibility in the glue line is not a good idea.
