I want to build a laminated stock from mountain mahogany and would like input about thickness and which type of glue to use.

Epoxy (good grip and loads of assembly time). Thickness - as the artistic element moves you.

Because of the twisted grain and tension wood of mountain mahogany, it is hard to get it flat. It likes to warp in drying and any time the moisture changes. Therefore, a strong gap filling adhesive like epoxy is a good idea indeed. Because of the tendency to move, it would not be on the top of the list for gun stocks for guns where shooting accuracy is important.

Remember that when using epoxy, you need to have a thicker glue line than with most over adhesives.
